Mango, avocado and pomegranate salad
This recipe is very low in Cholesterol and Sodium. It is also a good source of Dietary Fiber, Vitamin B6, Folate, Magnesium, Potassium and Manganese, and a very good source of Vitamin A, Vitamin C and Vitamin K.

Always use certified organic, local and fairly traded ingredients wherever possible

Serves 1
1/2 mango
1/2 avocado
1/3 cup pomegranate seeds
1 courgette
30g rocket

Optional (Increases the Omega 3:6 ratio)

To make the salad, simply peel the mango using a vegetable peeler. Slice the mango and avocado into small cubes. Set aside.
Weigh 30g of rocket onto a choice of serving dish.
Slice the courgette into thin slices using a mandolin and tumble over the bed of rocket or your choice of nutritious greens.
Tumble the mango and avocado cubes over the courgette followed by the pomegranate seeds (+ Optional).
Serve.
